Vegan Spaghetti Bolognese
Spag bol is such a weekly staple in so many places. It's an easy comfort. But it's so often made with mince and that doesn't suit our vegetarian/vegan friends. This hearty bolognese made with wholemeal spaghetti, lentils, mushrooms, carrots, celery and capsicum in a rich tomato sauce is just as good as the original, if not better.

Storage: Keep refrigerated, store at 5°C or below. Use on day of opening. Freeze with use by date. Once frozen, consume within 12 weeks. Cook from frozen or defrost in refrigerator and use with 24 hours. Do not refreeze.Heating from fresh:1. Heat in microwave for 2 minutes on high. Plastic film will expand during heating, this is normal.2. Let meal stand for 1 minute, remove film.3. Ensure meal is heated through, stir well and enjoy.Heating from frozen:1. Heat in microwave for 3-4 minutes on high. Plastic film will expand during heating, this is normal.2. Remove film, stir contents for even heat distribution.3. Cover loosely and reheat longer if required.
